Crock Pot Balsamic Chicken Recipe

I knew today was going to be hectic so I decided on a slow cooker meal. I absolutely love cooking in my slow cooker because I’m a morning person.  If I can get dinner started in the morning, that makes me a much happier person with less to do at dinner time.
 
This recipe tastes like an expensive meal or something we’d order on a date night, but it is so easy to make.

This is going to be dinner tonight.

Slow Cooker Balsamic Chicken

Cook Time: 8 hours
Total Time: 8 hours 5 minutes

A delicious weeknight meal that cooks all day in the slow cooker. Full of flavor and sure to be a family favorite.

Ingredients

  • 4-6 Chicken Breasts
  • (2) 14.5 oz diced tomatoes
  • 1 onion, thinly sliced
  • 4 garlic cloves
  • 1/2 c balsamic vinegar
  • 2 tbsp olive oil
  • 1 tsp each: dried oregano, basil, rosemary
  • 1/2 tsp thyme
  • salt & pepper

Instructions

    1. Pour olive oil on the bottom of slow cooker
    2. Place chicken breasts in the slow cooker, add salt and pepper
    3. Place sliced onion on top of chicken breasts
    4. Add dried herbs and garlic
    5. Pour balsamic vinegar and tomatoes on top
    6. Cook on high for 4 hours or low for 6-8 hours

 

I made a few changes to make it easier for me. 

To make it easier on myself I use frozen breasts because I buy them in bulk. When using frozen, I add 3-4 chicken breasts to the slow cooker and cook on low for 8 hours. 

You can put your balsamic chicken on top of anything you choose.  It works well on pasta, rice or potatoes.  Personally, we put it on top of brown rice and it tastes amazing.
 
I’ve probably made this dish 5 times in the last few months and my husband is thrilled each time that I do because it always turns out so well.

  1. Hi there, I hunted through your recipes and found this recipes, we love chicken one of the few meats that we eat and love balsamic vinegar and the spices you mention. I will have to give this a try!
