Pumpkin Spice Roasted Pumpkin Seeds

This is my solution to my pumpkin-spice cravings!

My son says pumpkin spice pumpkin seeds sound redundant but I’m all for it. This recipe calls for just 4 ingredients and is savory but feel free to mix it up and make it sweeter with some sugar or keto-friendly sweetener. 

First, I let my family loose on the pumpkin. See happy girl above, along with creepy hubby with the knife. My daughter was tasked with separating the seeds from the guts. 

Rinse the seeds and place them in a single-layer in a deep-sided cookie sheet and let sit overnight. The next day, pre-heat the oven to 325-degrees. Add seeds, pumpkin pie spice, cinnamon, and olive oil in a medium-sized bowl and stir to combine. 

Spread the seeds back in the deep-sided cookie sheet and bake for 20 – 25 minutes.

These cinnamon pumpkin spice roasted pumpkin seeds scream Fall snack! Simple to make and delicious your whole family will love them.

Ingredients

  • Raw Pumpkin Seeds
  • Olive Oil
  • 1 tsp. Pumpkin Pie Spice
  • ½ tsp. Ground Cinnamon

Instructions

    1. 1. Remove pumpkin seeds from the pumpkin and remove any strings.
    2. Rinse the pumpkin seeds and place them in a single-layer in a deep-sided cookie sheet and let sit overnight.
    3. The next day, pre-heat the oven to 325-degrees.
    4. Add pumpkin seeds, pumpkin pie spice, cinnamon, and olive oil in a medium-sized bowl and stir to combine.
    5. Spread the pumpkin seeds back in the deep-sided cookie sheet and bake for 20 - 25 minutes.
    6. Eat immediately or allow to cool and store in an air-tight container.

This year we melted a few tablespoons of butter, then mixed the dried pumpkin seeds and spices in a bowl. Then placed them on a parchment paper-lined baking pan. Either recipe works but I think I may like the butter flavor in addition to the spices. Feel free to mix it up!
