One of my family’s requests for Thanksgiving is this easy recipe for delicious, and super sweet, Sweet Potato Casserole. This recipe was given to me by my husband’s aunt and I’ve been making it every year since I got married. So, 17 years later it is still a favorite.
Sweet Potato Casserole
Ingredients
- One 40-ounce can, plus one 15-ounce can sweet potatoes (or 6 cups cubed cooked sweet potatoes)
- 1/2 c butter, melted (1 stick)
- 2 eggs
- 3/4 cup sugar
- 1 tsp vanilla
Directions
- Drain potatoes
- Combine all ingredients in large bowl and whip until fluffy
- Pour into baking dish
- Sprinkle topping (directions below) over potatoes
- Bake at 350 degrees for 30 minutes
Topping Ingredients
- 1/3 c butter, softened
- 1/2 c sugar
- 1/3 c flour
- 3/4 c chopped pecans
Combine ingredients in a bowl with a fork and add to the top of sweet potatoes before baking.
