Pancake Muffins
Here’s a simple recipe that can be customized for each member of the family. I’m going to leave this page open for my hubby so that make them for me on Mother’s Day. It’s something that the kids like to help us make because they like to be in charge of the ingredients. We’ve made these a few times and they are just so easy to make and there is no mess.
My husband put bacon on his pancakes, I put pecans on mine, my son had chocolate chips and my daughter (the adventurous one) put strawberries and sprinkles. 😉 They all turned out really tasty. Enjoy!
Pancake Muffins Recipe
Directions:
- Preheat oven to 350 degrees
- Mix pancake batter
- Spray muffin tins with non-stick cooking spray
- Fill tins with 1/4 cup pancake batter
- Add toppings to each “pancake” – we used bacon, chocolate chips, pecans, strawberries, sprinkles. You could also use blueberries, sausage or any number of toppings. You are only limited by your imagination.
- Bake for 12 – 14 minutes
- Serve

This is a cute and fun idea!! Thanks for sharing. My little guy and I love to put peanut butter on our pancakes. My hubby would probably just be boring and add butter but he MIGHT go all out and do the bacon, haha!

I am so grateful for this recipe I found on pintrest. I never make pancakes much to my children’s disappointment. I just hate having to stand there and wait then flip and go in batches because my griddle only holds 4 pancakes, but now I have a way to make pancakes with no flipping or even paying attention they will be having a lot more of them.
