Slow Cooker Hash Brown Casserole

I know, I know. Two slow cooker recipes in a week. You are saying, Sherry, what are you thinking? I’m thinking that I love my slow cooker and I am a morning person. Bingo. We have a winner. Also, I am someone who likes to use up what I have in my pantry and this recipe lets me do just that.
Slow Cooker Hash Brown Casserole Recipe

Breakfast for dinner is always the answer. This easy to make slow cooker recipe is one you'll want to make every week.
Ingredients
- 16 oz potatoes (frozen hash browns)
- 10 3/4 oz cream of chicken soup
- 1/2 c melted butter
- 1/4 cup onions, diced
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1 dash black pepper
- 1 cup corn flakes, crushed and divided
Instructions
Stir together butter, onions, hash browns, soup, milk, cheese, pepper, and 1/2 c corn flakes. Pour into the greased slow cooker. Top with remaining cornflakes. Cover and cook on high for 3-4 hours.
This is the second time I’ve made this dish and, honestly, I think it came out better the first time. I may cut back on either the butter or the cheddar cheese next time, but not by much. My family loved it and my hubby said he wouldn’t change it, but I think maybe I will add some sausage crumbles next time, too. I will let you know how it turns out when I make it again.
