Crock Pot Balsamic Chicken Recipe

I knew today was going to be hectic so I decided on a slow cooker meal. I absolutely love cooking in my slow cooker because I’m a morning person.  If I can get dinner started in the morning, that makes me a much happier person with less to do at dinner time.

One of my favorite meals is from Dishing With Leslie.  She has some amazing meals on her website, but the Balsamic Chicken Recipe is my go-to dish. It is so easy to make and it tastes like an expensive meal.

This is going to be dinner tonight.

Balsamic Chicken {Slow Cooker}


  • 4-6 Chicken Breasts
  • (2) 14.5 oz diced tomatoes
  • 1 onion, thinly sliced
  • 4 garlic cloves
  • 1/2 c balsamic vinegar
  • 2 tbsp olive oil
  • 1 tsp each: dried oregano, basil, rosemary
  • 1/2 tsp thyme
  • salt & pepper


  1. Pour olive oil on bottom of slow cooker
  2. Place chicken breasts in slow cooker, add salt and pepper
  3. Place sliced onion on top of chicken breasts
  4. Add dried herbs and garlic
  5. Pour balsamic vinegar and tomatoes on top
  6. Cook on high for 4 hours

I made a few changes to make it easier for me. 
1. I buy frozen chicken breasts in bulk, so I usually add 3-4 frozen chicken breasts to the slow cooker.
2. I cook on low for 8 hours 
Those are my ONLY changes. Everything else remains the same.

You can put your balsamic chicken on top of anything you choose.  It works well on pasta, rice or potatoes.  Personally, we put it on top of brown rice and it tastes amazing.
